This colorful, protein-rich quinoa cranberry salad is a delicious and nutritious side dish or a post-workout meal! It’s a great recipe that everyone will enjoy!

1 c. quinoa
2 c. water
1 tsp. sea salt
1 c. of dried cranberries
1 c. almonds, sliced
1 c. goat cheese
1 bunch green onions, sliced
1/4 c. of extra virgin olive oil

1. Cook quinoa in boiling water, add sea salt, and reduce to simmer for about 15 minutes.
2. Place cooked quinoa in mixing bowl. Add in dried cranberries, sliced almonds, goat cheese, and green onions.
3. Serve and enjoy!
